I had a quiet and relaxing at home today, but I did end up taking a ride this morning, and stopped at whole foods (what else is new!), and was ecstatic to find RASPBERRIES! Raspberries are one of my favorite fruits, and I absolutely flipped when I saw them! Summer really is around the corner! Yay!
My mid-morning snack was another fabulous smoothie. Today I used 1 cup of almond milk, frozen peaches, strawberries, a banana and 1 tbsp of flax. Mmmm,mmm,mm! I also had some of my dark chocolate covered pretzel crisps on the side. Chocolate never fails to make me happy.
My lunch today basically consisted of things that I needed to use before they went bad, or things that I only had very little left of. I had a ‘honey’ toasted sandwich with the last 2 slices of tofurkey (i need more asap!), some delicious and creamy guacamole, some broccoli slaw that i mixed with honey mustard and whole grain dijon mustard (this tasted good enough to eat alone!), some cucumber slices, and some spinach leaves. I had my yummy sandwich with garlic/parmesan baked pita chips (my fav!) and a super sweet kiwi. I was so satisfied after this wonderful meal.
About 3 1/2-4 hours later, I got a little hungry, so I decided to snack on some vanilla soyogurt topped with cranberry trail mix, and a juicy red pear. Yummm!
I have a Veganomicon dish in mind for tonight’s dinner, and I’m prepping ahead for it already! Should be a good one!

I don’t know if you saw in my blog or not, but I tried your yogurt/trail mix combo for a snack and it was FABULOUS, I’m officially addicted!
What are your favorite brands/flavors of soy yogurt? I’m thinking about taking the plunge this weekend, and I need some suggestions!

Chocolate always makes me happy too (hence my name!). Raspberries never fail to put a smile on my face either :o).
What exactly is broccoli slaw? Is it something that you make with broccoli?

kristin - i’m so glad you like it! the trail mix makes yogurt so much less boring. ;) i buy wildwood vanilla soyogurt, and i love it.
ccv - broccoli slaw is like cole slaw mix, but made with broccoli stalks instead. it comes bagged similar to pre-washed spinach.
romina - thanks! i love those glasses, i have all four.. peanut butter cookies, cheesecake, pecan pie, and carrot cake! adorable!
hk - yes, i found the spoon at the store! it is so cute.. i want to try to eat my oatmeal with it one day! ;)

Everything you make looks so delicious. I love broccoli slaw as well. I think it tastes so much better than the cabbage in coleslaw
